Edit: the alcohol will evaporate during cooking: I just made it for lunch tomorrow and I think a whole bottle is a bit too much!

It is unseasonable warm here today (mid 40’s) so I decided to cook more of a Summer “fun” dinner for us tonight. ~3 pound rack of St. Louis cut ribs:

My daughter is going to make some cornbread muffins and bake beans. Crazy but they had some nice looking ears of yellow sweet corn at our local store. Round it all out with a little cole slaw! Football game starts in a couple hours!

I found a bag of okra in the freezer so I thought I would make some gumbo. I looked for some sausages or chicken or shrimp or crawfish tails but I couldn’t find any, so I decided to just use ground beef. I also could not find Tomatoes or peppers or onion. I decided to attempt it anyway. It wasn’t terrible and it wasn’t great either. It was just meatyokra. mediocre meatyokra

I’m going to smoke a 4 pound Boston pork roast today. Weather looks pretty good. Gonna try using yellow mustard as a binder for the rub. I usually just rinse, dry, and then apply the rub straight on the meat.

The pork butt hit its stall @164°F about 10 mins ago. Drenched it with two cups of this beer and wrapped it up tightly in heavy duty foil. Bark looked excellent!

The most underrated meat. Incredible value for smoking and fantastic tasting!

I discovered that if you add a bit of coconut oil in a skillet with kale it makes it much easier to scrape it into the trash.

For those who like hot sauce, I recently received what I feel is the best hot sauce I’ve ever tasted, Melinda’s Ghost Pepper Black Truffle sauce. This stuff is delicious! It has good heat and build without the scalding discomfort or sauna associated with very hot sauces, yet has the smokey flavor Ghost peppers are known for, the creamy texture of a good mustard, and a rich flavor that complements many foods well. I just kept saying, “Wow, this stuff is good!” I also like Melinda’s regular Ghost Pepper hot sauce, but this stuff is on another level. Amazon had it, but your grocery store may as well.

Melinda’s makes really good sauces all around. I’ll put that on the list to try.
